Lima Bean Dip



This is one of the very first creations I made when I started out on this weight-loss journey and this became a fan favorite amongst my friends. This is great served at a party with fresh vegetables for dipping or makes a wonderful snack that travels well.

Lima Bean Dip
Ingredients:
1 pound frozen baby lima beans
3 tablespoons of tahini (which is blended sesame seeds)
1/4 cup fresh squeezed lemon juice
1 tablespoon extra-virgin olive oil
1 tablespoon of garlic powder

Preparation:
1. Cook beans in boiling water 10 minutes or until very tender, or steam them until tender (which was my method). Drain the beans, reserving 1/2 cup cooking liquid.
2. Combine the tahini, lemon juice, olive oil, and garlic powder into a blender and blend well. Add the lima beans and the reserved ½ cup of cooking liquid, blending until smooth consistency is achieved.
3. Alternative to tahini: Place sesame seeds in a blender; process until finely ground. Add juice and remaining ingredients; process until blended. Add beans and 1/2 cup reserved liquid; process until almost smooth, scraping sides of blender occasionally.
